Fermented using the wild airborne yeast from the Aberdeenshire countryside, and refermented on locally sourced blueberries, Spontaneity #3 spends over a year in oak where time works its magic and the liquid develops into a complex, intriguing and balanced sour ale that is a true expression of time and place.
